How do you construct tables (ie mini spreadsheets) to display things like census data?

There are also a number of Excel to Wikipedia table converters. One is at https://tools.wmflabs.org/excel2wiki/ and it works fairly well.

My own recommendation would be to create a spreadsheet on my computer to conform to how I want it to look. Then I would use my handy-dandy clipping tool and convert my spreadsheet from my computer into an image and upload that to the profile(s). Tables are great options on free spaces that are subject to editing, but as a display, in my opinion, an image is preferable and easier.
