Why does just the name of the groom in biography's marriage section appear bold text?

It's because the name has been entered like this:

[[Steyn-1759|Johannes Frederik Steyn]].  

This is usually for a link to another profile, but as this is the profile person it's displayed as bold.

Is it possible for it to display in regular text and not bold? Could you maybe advise me how to change it to regular text please?

with this:

Johannes Frederik Steyn

Just remove the Wikitree profile link code.  (Be warned, however, there are some people who persist in replacing that code to link the profile to itself (except it doesn't work as an actual link).)
