Jacques Louis Hulin married Catherine Toups of the German Coast settlement in Louisiana on 25 January 1752 at the St. Charles Borromeo Church in (now-) Destrehan, Louisiana.[2][3]
He died at home on 23 August 1830 at about age 98, and was buried the next day in the St. Martin de Tours Parish cemetery.[1]

What records other than the purported death record show him using the name Louis? I think it far more likely that 1830 death record is for his son Louis who would have been 76 at the time (using his baptism date) -- ages were very often exaggerated in these burial record. I have never seen Jacques called Louis otherwise -- whether in his marriage record or Voorhies census records.
Additionally, I wonder why he isn't mentioned in Kaskaska Manuscripts when discussing his father's death. Only the daughters are mentioned. Was he older and not in need of a guardian? If that's the case could he be (especially considering his marriage records says his mother is Marie) this child referred to in Kaskaskia Manuscripts: 26:5:23:1 Petition to the judge by Jacques Bernard dit St. Jacques of Fort de Chartres requesting that Pierre Hulin claim and support the child born to Hulin and Bernard's wife during Bernard's absence. Followed by Chassin's order to Hulin and Mme. Bernard to appear with the baptismal certificate of the child. Fr. Kereben. (lp. Pub. I. 44/ K400)
An article in Teche News St. Martinville, Louisiana · Wednesday, November 03, 2021 does attribute the 1830 death date to the son Louis Jacques born in 1753.

You make some very good points. I agree that ages were very often quite exaggerated in the old death records, and given that's the only record we have that uses Louis, I agree it was more likely his son. Can you add a link to the article, or even just a page number?

Re 26:5:23:1 cited above. The format of the numbers means May 23, 1726, item 1. So you could use "before 23 May 1726" as a birth date for Jacques Hulin. The above record is on p.64 of the manuscripts. I looked for a baptism record in the online records of Prairie du Rocher at familysearch and elsewhere and did not find one. So I know nothing about Madame Bernard.
Additional support for him being born in the 1720's is that he appears on German Coast militia records in 1763 (p.89 of Voorhies) and 1766 (p.185 of Voorhies) and still appears on the 1770 St Charles Parish Census (p.264 of Voorhies) but NOT on the 1770 German Coast militia listing (p.404-411 Voorhies) which gives the men's ages. There are only a handful of men listed over the age of 40. Comparing the order of names in the 1766 militia and the 1770 one, his son Louis is likely the 16 year old Louis Quillain listed on p.405.
The full citation on the father's death mentioning only the daughters is on p.409 of the Kaskaskia Manuscripts:
"43:6:20:1 Nomination of Louis Siannau Desmoulins as deputy guardian of Marie Louise Hullin, age 13, and Agnes Hullin, age 8, daughters of the late Pierre Hullin and his widow Dorothee, by Michel Dufrene, guardian of the children and administrator of their mother, and by other friends.
