Page 89 mentions a Fred and Tom Poole of Foxwarren as being the 3rd and 4th earliest capenters in town. I believe the Tom could be Edith's paternal grandfather.
pp 377-8 Has a Jack Poole and wife Mabel Gee with a daughter Edith (m. Proctor of Winnipeg) that appears to be no relation to your Poole's. I mention it only because it is worth noting there may be more than one Edith Poole in the records for that area.
Given that the Jack Poole of Solsgirth (p. 114, 377-8) and Fred and Tom Poole of Fowarren (p. 89) were all carpenters a possible familial connection may be worth investigating.
