Certainly, on any profile you added categories to, you can click on the category of interest at the bottom of the page.  You can get there easily by clicking Categories at the top.

If you want to examine changes to a category itself, there's a button for that (rather small) at the bottom of the category page.

I guess I explained it wrong. I wanted to have a list of categories that I created
hmm, nice conundrum.  What is the reason you wish this type of list?  The only alternative I can think of is to look at your personal activities log, but this would be a long process.
Someone asked me and I considered it an interesting idea to be able to see how many I did and also to go back and see my mistakes. The activity log doesn't show edits in the category namespace.

There doesn't seem to be.  The WikiTree+ Search Category Content doesn't have a created by search.   

I also can't think of a way to search the category change history pages for a user ID.

the change history button on a category page does show IDs, for example see Migrations category change history

I can query the SQL to get those categories.
