How would you record the Last names "Swinney Watts"?

I am working on expanding family tree of Sarah Ann Swinney Watts [Watts-8830] DOB 1839. Her father was William Swinney Watts (per; '''Census, 1851''' Sarah Ann Watts in household of William Swiney Watts. Event Place Market Harborough, Leicestershire, England. Residence Note; Nags Head Yard. England and Wales Census, 1851. Page Number 25, Registration Number HO107, Piece/Folio 2079 / 376).

The last name appears to be an un-hyphenated double name. Currently Sarah Ann is recorded as 'Watts'. I'm fairly certain other siblings will be found to be last name Swinney Watts too. What would you suggest? There are no last names "Swinney Watts" recorded on Wikitree.

I looked up the children's birth records in GRO. It seems George and John were registered under the name Watts (mother's maiden name Foster). There is a marriage in the Market Harborough district of an Elizabeth Foster to William Watts, 1838.

The clue might be in the census where none of the children are referred to as Swinney Watts, nor is the wife. The marriage of the parents might help.
