I wonder if it might be possible to learn more about Vito Pace and Vittoria Giorgio

Searching in Italy is really beyond me hence this query. Vito Pace and Vittoria lived in Castelgrande, Potenza, Basilicata, Italy. They had a number of children. Pasquale Pace born there on 8 Aug 1928. He died in Red Lake, Ontario on 27 Dec 2009. Pasquale married Maria Giovanna Cristiano in Castelgrande, Italy on 21 Sep 1950. Maria was born 9 Aug 1929 in Castelgrande and died in Red Lake, Ontario 28 Sep, 2021. Besides Pasquale, Vito and Vitorria had Giuseppina Pace born 6 Oct 1933 in Castelgrande, died 15 Dec 2016 in Red Lake. Maria Pace born 14 Feb 1926 in Castelgrande and she died in Montreal but I don't know when. She married Antonio Masi. Then there was Terese Pace born in Castelgrande on 21 Jul 1924. She also died in Montreal. She was married to Vito Antonio Nardi who was born in Apr 1924. It looks like the children either came to Montreal or Red Lake or perhaps they all went to Montreal and some carried on into Red Lake, Ontario. It just seems like there are a great many folks named Pace , even just in Castelgrande so I have little hope of finding the parents of Vito Pace or Vittoria Giorgio but I thought I would ask anyway. Although there are a lot of Italian records online (do a web search for Antenati and the website should be at the top of the list), however, records for the birthdates you mention are covered by the European privacy rules, and therefore are not online.

There are some Italian records from the late 1800s or very early 1900s, but typically available records end before then, sometimes as early as the 1860s.

If you can find obituaries they may have clues for earlier generations.

Today is your lucky day. I managed to find the birth record of Vito Pace. He was born 5 Nov 1902 in Castelgrande at #11 via ... Santa Maria degli Angioli to Pasquale Pace, age 23, peasant farmer, and his wife Teresa Bologna. The reason I know this is the right record is that it has an annotation of marriage in the margin to Vittoria Giorgio; it looks like 19 Aug 1922.

With that I was able to find Vittoria's birth on 5 Oct 1900, also on via Santa Maria degli Angioli (#563), to Giuseppe Giorgio, age 24, peasant farmer, and his wife Maria Ruvo.

With this start you can now go back theoretically back to 1809 using the available records in FamilySearch and Antenati.

As George said, the time period you are looking at is not easily accessible online.

Your best bet to continue researching is to find some clue to the parents' generation --- immigration/naturalization documents or whatever. If Pasquale was born 1928, his parents were likely married by 1927 and probably born by 1907. This puts you right at the edge of what is available online at familysearch for that town. If you can get traction in those records, you can go back in time to the earlier records at Antenati 

The next alternative is to write to the town and request birth/marriage records to learn more about the previous generation.
