Why are some of Joseph Mosher and Lydia (Tabor) Mosher's children listed as Mayflower descendants but not all of them?

Not everyone chooses to tag their ancestors for who their ancestors' ancestors were. For example, I am not a big fan of the stickering business, and generally take no steps to add such to any of my ancestors, and I use categories very sparingly.

I am not a big fan of the stickering business,

I agree. Seems that is all some are interested in, is adding stickers.

Because, the Mayflower Project only covers descendants born before 1700. So the first three are part of the project but the rest were born after 1700. They are still descendants of a Mayflower passenger, but not part of Wikitree's Mayflower project.
