Birth of a son to a 51-year-old woman would be highly unusual, as well as a seemingly first marriage between 47-year-old Alice and 54-year-old William. Is it possible there is a skipped generation here, a William born c. 1535-1540 who married (secondly) Alice Apse in 1560 and whose mother was Alice Hablett? Alternatively, familysearch has this William marrying first Anne Hablett (1516-1560) and second Alice Eppes (1531-1580).
I agree with Brad, that William's wife was Alice/Alyce/Alse Apse, as written in The Tyler Collection, The Institute of Heraldic and Genealogical Studies; Kent, England, Tyler Index to Parish Registers, 1538-1874, film pg 1690, marriage pg 3 of text (link below). of interest, in my research into this question, I found reference to an Alice Ffyske that was married to xxx Meriam. She was the daughter of William FFyske and Margaret Ball b before 1558. ref: Fiske, Henry, The Fiske Family Papers, Fletcher and Son, Castle Works, Norwich. in North America, Family Histories, 1500-2000, pg 47 of book, film pg 70. Accessed 12 Sep 2021 at https://www.ancestry.com/family-tree/person/tree/1435479/person/432160802570/hints. I am interested to hear what others make of this - I have found nothing that links this particular Alice to Merriam-153. It would be nice to find the original record of the marriage transcript, and not the compilation seen in the Tyler Index.
Followup to earlier comment: the Hablett/Apse confusion may come from the 1616 will of Robert Piper who married a Margaret and listed his "brother-in-law" William Merriam (Merriam-13). The will also listed the deceased grandfather of the 3 eldest daughters of Robert as John Hablett. Robert's father would have been a Piper, so wife Margaret may have been a Hablett. B-I-L also meant step-brother, so possibly Alice Apse married Robert Piper's father after the death of her husband, William Merriam-153. Or, Robert had a prior wife (Hablett) or Margaret Merriam had a prior husband (Hablett) who gave her 3 daughters before she married Robert Piper. Or, the B-I-L relationship is from other married siblings. In any case, Alice would not be a Hablett and the 1560 marr. record calls her "Apse".
Merriam-153 and Meriam-31 appear to represent the same person because: "Merriam" and "Meriam" are two of the many accepted versions of this surname. I have noted some of the variations on William's profile. Children, wife and dates seem to match up. If the prospect managers prefer the surname "Merriam" than the merge should be switched, accordingly. Thanks.

Please check this, so I think his wife was Apse, not Hablett. Also his first wife Anne Unknown was buried 18 Jun 1560 in Goudhurst https://www.ancestry.com/interactive/1901/31854_A012216-00018/28256 and according to "Ancestry of Franklin Merriam Peabody" (Kent records) available free here https://archive.org/details/ancestryoffrankl00merr
