Joseph Chauvin lived

Joseph Chauvin was born and baptized on 6 Jul 1711 in Sainte-Famille parish of Boucherville, Canada, Nouvelle-France. His parents were Jean Chauvin and Marie Madeleine Courtois.[1]

Marriage
He married Marie Françoise Riquet dite Laverdure, daughter of François Jean Baptiste Riquet and Marie Anne Renaud, on 8 Aug 1735 in Sainte-Famille, Boucherville.[2] A marriage contract was done on 7 August before notary Antoine Loiseau dit Chalons.[3]

Death and Burial
He was buried on 1 Feb 1750 in Sainte-Famille parish cemetery of Boucherville, the record giving him around 40 years, no death date listed on act.[4]

Fils de Jean et Marie Poineau selon le mariage religieux le 8 août. Or, dans son contrat de mariage, passé devant le notaire Loiseau de Châlons, le 7 août 1735, il stipule que ses parents sont Jean Chauvin et Marie Courtois (selon Nos Origines)

Notes

Note: Only his marriage record lists his mother as Marie Poineau, which appears to be a clerical error, there is no such couple Chauvin-Poineau outside of this record at all. The record actually also had an error on the margin notation by the priest, where he had listed the wife as Marie Poineau and then crossed that out and wrote another name over it. Contract clearly names his mother Madeleine Courtois. Liard-1.

I agree there is a good chance that Joseph Chauvin's mother is Marie Courtois but it would be nice to have the marriage contract source to solidify that fact. Does anyone know where to find the marriage contract that is mentioned where Joseph stipulates his mother is Marie Courtois?

In the note above it shows that Joseph Chauvin stipulates his mother is Marie Courtois in his marriage contract. "Note: Son of Jean and Marie Poineau according to the religious marriage on 8 August. However, in his marriage contract, passed before the notary Loiseau de Châlons, on 7 August 1735, he stipulates that his parents are Jean Chauvin and Marie Courtois."

I have seen in Tanguay volume 3 page 46 that Joseph Chauvin was married to Marie Francoise Riquet and his parents were Jean Chauvin(father Pierre) and Marie Poineau(no father listed) and also on the same page there is a listing for a Jean Chauvin and Marie Courtois. However the Complément Leboeuf volume 2 pg 103 corrects this as follows "CHAUVIN, Jean et Marie Poineau. Il s'agit de - CHAUVIN, Jean et MarieMad. Courtois. Voir contrat Loiseau, 7 aout 1735, Joseph Chauvin et M.-Frse Riquet. P. 46" This suggests that a contract exists.

I found a notarial document in Répertoires De Notaires (Notarial Catalogs) for Montreal, Notary Chalons, Antoine Loiseau (1730-1760) at https://www.ancestry.ca/imageviewer/collections/61062/images/45894_83024005549_1619-00063?pId=7691234(Paid subscription) but it is only showing that Loiseau performed the service of writing up the contract and does not show who Joseph Chauvin's parents were. The actual contract would be a great source given the marriage record does say his mother was Marie Poineau.

In the biography above it states that Joseph is the child of Jean and Marie Poineau and then also states that the marriage record states he is th child of Jean and Marie Courtois. Is Marie Courtois a typo as I believe that Marie Poineau and Marie Courtois are different people.

Nowhere in his bio does it state that he is the child of Jean and Marie Poineau. His baptismal record lists his mother as Marie Madelaine Courtois. I'm guessing you are referring to his marriage record. See "Note" just added to profile, after marriage.
