Who were Gilbert Shermans parents?

Hi all! I'm needing some help on one of my ancestors, Gilbert Sherman b. 1814 in Marion County, New York d. 1904 in Branch County, Michigan.

My issue comes in with his parents...I had been going off of the one solidish source I have of his death certificate which states that his parents were Edward Sherman and Lucy Houst however, most other family trees I've seen have his parents listed as Humphery Sherman and Esther Arnold (both more desireable in a way because they link back to Philip Sherman from the Great Puritan Migration and Esther to a line connecting Benedict Arnold).  So far the only source of sorts that I have found to confirm the connection to Humphery Sherman has been from a book on Sherman genealogy that has this exact Gilbert Sherman (same birth and death date and same wife) listed as one of Humphery Shermans children.  Book in question: Going to Palmyra : Sherman deeds by Lutzvick, Margaret Sherman, 1942-

Both families were located in the same areas...Wayne County, New York to Noble County, Indiana and Branch County, Michigan...there are also multiple children under both sets of parents, all of similar ages and places.   I have little to no info going back on Edward and Lucy though while Humphery and Esther are much more clearly mapped out (genealogy wise I mean).  

So, I'm stuck.  It could really go either way and obviously the author of this book believed that his parents were Humphery and Esther but his death certificate clearly states Edward and Lucy.  

Any help that anyone can give me would be greatly appreciated!

If the death certificate is for the right Gilbert, I think you have to believe it.  Unless both Sherman families had a son Gilbert, and the certificate is for the other one.  The circumstances you describe (two families in the same places at the same times) beg for conflation.  Add the potential historical celebrity connections to make it more tempting.

I find it useful to lay out both families on a spreadsheet with records chronoligically ordered, side by side.  When both appear in the same area at the same time, you should be able to distinguish them based on who is in the household.
