I am using the following code to link to a Find a Grave memorial. It opens in the same tab / window. How can I make it open a new tab / window?

I don't think there is anything you can do to make it so that a single left click on the link will open it in a new tab/window for all users. See links.

If you want to open the linked page in another tab then you can hold down the Ctrl (windows) or Cmd (Mac) key and then click on it.

I will place a comment after the link to suggest that the user open in a new tab/widow.
It seems like it is just a personal preference. Some people are happier just opening it in the same tab and then pressing the back button to get back to the profile.

When in edit mode, click on preview. You can then right click on any source link in the preview pane and say "Open in new window".

Or "Open in new tab" if you prefer to use tabs. This is what I do, in Firefox.
