Does anyone know what sort of (live) horse would be described as a "Davy Crockett horse"?

I found an animal described as a "Davy Crockett horse" in an estate inventory in Harrison County, Texas, dated 1870 (an image of the original is available at FamilySearch, in Probate Minutes, vol. K recording date 1868–1872, p. 238, FHL DGS 5782979, image 507). Has any one come across this? If so, what does the descriptor mean?

Thank you so much for this! The terminology in the estate inventory was quite interesting, and saddlebred makes so much sense for the area. That is was valued less highly than the (working) mules is quite telling.
