The National Archives hosts a PDF illustrating the columns in the 1820 U.S. Federal Census. That PDF indicates the following:
  • Columns 1 - 6 provide counts of free males.
  • Columns 7 - 11 provide counts of free females.
  • Columns 12 - 15 provide counts of foreigners not naturalized, and persons engaged in agriculture, commerce, and manufacturing (respectively)
  • Columns 16 - 19 provide counts of enslaved males
  • Columns 20 - 23 provide counts of enslaved females
  • Columns 24 - 27 provide counts of free colored males
  • Columns 28 - 31 provide counts of free colored females
  • Column 32 provides a count for "all other persons except Indians not taxed"

Looking at the 1790 census for North Carolina. There are actually 6 columns. The last one appears to be a TOTAL column. Kind of a check digit, maybe?
