Exploring the site is the best way to learn. One way to do that is to check out the drop-down menus on the top right side of your profile page. Finding a known ancestor and collaborating with the profile manager is another great way to start.

Second question: I uploaded two GEDcoms. One has my paternal and maternal info on my dad's side. Should I just leav it there or delete and upload later when ready to work on dad's mother's side?

If family members or ancestors are already on WikiTree, you don't add them again. WikiTree is a one-world tree, meaning each person has only one profile.

I suggest you review both gedcoms to see what is on WikiTree - don't add the profiles already created, and add the ones that are not.
Start with you, then your parents, siblings, and your children; if you do this for each generation, you will connect to the one-world tree, and the profiles will be there to create biographies and source correctly when you are ready to work on them. Ther other advantage to adding what isn't on WikiTree for both lines is that WikiTree has collaboration where other members may be related to the same people and they can work on the profiles also.
