From all this, I would estimate a DoB of Jacques of 1630 and 14 Oct 1681 as his death. The Jacques born in 1590 would be ruled out, basically because of age. Paul being born in 1656, would make Jacques 66 years old when Paul was born, highly unlikly.
I personally would go with Jacques with DoB of 1630, who married Marie Marthe LaPorte born about 1635. There are two entries on WikiTree that are identical but different last name spellings, Demarets-5 and Desmarais-21. Both have some dates.
I hope I have been helpful, and this clears up your road block. Have a great day and happy WikiTeering.
