His other brothers are all accounted for in marriages or burials.
Therefore it is most likely that Joseph Ulphie was baptized Joseph Morin.

Joseph was the son of Pierre Morin and Scholastique Dubord. He was born 30 Aug 1824 and was baptized the same day in Champlain. His godparents were François Dubord and Louise Bigot dite Duval, no signatures. [1][2]
Marriage
On 1 Oct 1844, in Champlain, Joseph Ulphi Morin minor son of the late Pierre Morin and Scholastique Dubord married Emilie Davis minor daughter of Alexandre Davis and Rose Trottier. Witnesses were Dositée Morin and Alexandre Davis. The bride and groom sign along with Docité Morin. [3][4]

Notes on Name
Joseph Ulphi was mostly known as Joseph, he signs Joseph at his marriage.
In the Family Search transcription of the 1871 Census of Canada his name is Joseph Alphie [9] but a look at the original document the "A" is shaped unlike the others on the page. [10] I believe this is a "U" and consistent with Ulphie.
