entries for 24th Feb (IGI has 2 Mar 1832) include these two baptisms for children of George McAdie and Elizabeth Rosie, reading:
McAdie George, Grieve at Killimster, had by his wife Elizabeth Rosie a son born Decr 14th 1831 & bapd James. - Witt. David Farqhuar, Farm Servant at Killimster & Margaret Leith there. - Also a son born April 3rd 1830, & bapd William - Witt. Jean McAdie in Windlass & Donald Scott, Servant in Ackergill[4][5]

Two marriages?

The identification of the William married to Euphemia Cooper as the child of George and Elizabeth (Rosie) McAdie is thanks to their Leith marriage entry.
Both William, joiner, and Euphemia, were described as resident 47 Yardhead, Leith. As this was in Nov 1850, not that long before the 1851 census, an address search of the latter showed who was occupying that address - the family or Robert McAdie, joiner, wife Ann and family, ie William's brother.
William is not shown as widowed on his 1857 marriage to Sarah, which may still be a problem in his id as the William, customs officer marrying Sarah, but wife Euphemia did die back in 1852.
Some small corroboration that one and the same William married both Euphemia and Sarah is that one census, 1871, shows him as born Edinburgh, the rest show Wick, and we do now have William placed in Edinburgh, however briefly.

Occupations

Versatile chap. Over time William, assuming correctly identified in all records, morphed from assumed son of farmer in 1841 census, to joiner at marriage in 1850, and in the 1851 census, to Customs Officer from his 1857 marriage and subsequent census records.
